I use this velocity curve for my keyboard:

Velocity = [0, 1, 14, 27, 43, 54, 66, 91, 125, 127; 0, 0, 7, 28, 64, 87, 102, 120, 127, 127]

It looks kind of like an ogive; i.e. an S shaped curve.

If your keyboard does not send very low or very high midi values easily this velocity curve works great.
