I'm enjoying your review. As far as your gripe. You can click on the square with the check mark to the right of the instrument name in the interface, and you can make the velocity stay put through all of your instrument changes.

I think you want the "Parameter Freeze" window to select and lock in your chosen velocity curve (and many other parameters - I like to mute key noises as well - purists hate me :-) ).

And bonus marks for mentioning Linux !  Incidentally, "Linux" - why do people say it like "LIN-UX" when the chap it's named after is called Linus - pronounced more "LINE-US" not "LIN-US" ?

I have PianoTeq 5 Stage, which I haven't been unhappy with, was not sure I was going to upgrade to 6. After seeing your vid - I'm going to!
