So... how does one actually go about using this "pedal" while playing? I have three pedals in use in their traditional convention. My piano does not have a fourth input.

In Pianoteq 2.3 you could set the pedals to the pedal of your piano. I supose V-3 can do the same.
You probably can set the pedals of you piano to 3 of the 4 pedals of Pianoteq. So you need to let one out. Take out the one you feel you don't need..

Hmm, which pedal to give up would depend on the composition being played.
Do we have a new feature request here? Custom pedal presets? Or could the pedal configuration be part of an FXP preset?

You have Options->MIDI->MIDI Mapping. You can save your own MIDI Mapping presets. That's what you want to do to switch pedals.
